Zucchini Casserole
3 large zucchini, cubed do NOT peal

1 large onion, chopped

2 cups shredded Mozzarella or Romano cheese
1 can condensed cream of celery soup
2 eggs , beaten
2 tablespoons mayonnaise
2 tablespoons sugar
Italian seasoned bread crumbs

Place zucchini and onion in pot and cover with water. Simmer until zucchini is slightly tender.

Add shredded cheese, cream of celery soup, beaten eggs, mayonnaise and sugar. Stir until well mixed.

Pour half of ingredients into a casserole dish, sprinkle generously with Italian seasoned bread crumbs. Spoon in remaining ingredients so as to not displace the seasoned bread crumbs. Top with a generous sprinkling of Italian seasoned bread crumbs.

Pre-heat oven and bake for 35 – 45 minutes.
