Quick tomato sauce
4 tablespoons Tomato paste
2 Tablespoons minced garlic
1 tablespoon basil
1 tablespoon oregano
4 table spoons extra virgin olive oil
1/4 cup grated parmesan cheese
10 cherry tomatoes
1/4 cup water

Place all ingredients except cherry tomatoes and water in a medium sauce pan. Place over a medium heat and stir occasionally until mixture is hot. Add cherry tomatoes and water. Bring to a light boil. When cherry tomatoes are soft mash them with a potato masher. Heat while stirring for an additional 3 minutes.

Makes about 1 1/2 cups of sauce.

This sauce is great over chicken patties, Italian sausage or spinach.
