Peanut Brittle
1 cup granulated sugar
1/2 cup light corn syrup
1/4 cup water
1 teaspoon butter
1/2 teaspoon baking soda
1 cup peanuts, shelled and unsalted

In a medium sauce pan, combine sugar, corn syrup and water. Bring to a boil then reduce to medium heat and cook to about 320 degrees. (Use a candy thermometer.)

The sugar may crystallize on the sides of the pan. Use a wet pastry brush to brush the crystals back into the mixture.

Remove from heat and add butter and baking soda while stirring. The mixture will foam up but that is normal. Add peanuts and stir until well mixed.

Select a baking sheet with sides and grease it thoroughly.

Pour mixture on well greased baking sheet and let cool.

When thoroughly cool, break into pieces of any size you wish.
