Quiche Lorraine
4 strips of bacon
1/4 cup onion, finely chopped
1 (9-inch) baked pie shell
1 1/2 cups Swiss cheese, shredded Swiss
4 large eggs
1 1/3 cups heavy cream
3/4 teaspoon salt
1/2 teaspoon dry mustard
1/8 teaspoon white pepper
1/8 teaspoon ground nutmeg

Preheat oven to 435 degrees.

Fry strips of bacon in a skillet until crisp; remove from frying pan, crumble, and set aside.

Cook onion in bacon drippings until transparent and drain.
Sprinkle the onion and bacon over the bottom of the pie shell then sprinkle with Swiss cheese.

Blend eggs, cream, salt, dry mustard, white pepper and nutmeg together then pour over the mixture in the pie shell.

Bake for 10 minutes. Reduce the heat to 350°F and bake for an additional 30 to 35 minutes, or until the center is firm.

Makes 8 servings.
