Mexican Scambled Eggs
8 medium eggs
1/2 medium onion, finely chopped
1/4 cup milk
1 tablespoon Cumin
1 teaspoon Chili Powder
Ground Black Pepper to taste
1 cup Cheddar Cheese, grated
1/2 cup Cilantro, chopped
1 cup ham or sausage, Diced (1/4 pound browned hamburger will work too.)
1/4 cup Green Pepper, chopped (optional)
Canned sliced Jalapeno peppers (optional)

Place 8 eggs and 1/4 cup milk in large mixing bow and scramble.

In large frying pan add enough cooking oil to cover the bottom of the pan. Add onion, your meat choice, Cumin, Chili Powder and Ground Black Pepper. Cook over a medium heat until meat is done. Drain off excess grease but leave a little so the eggs won’t stick

Add mixture to frying pan and turn over frequently with a spatula. When eggs are almost done, add cheddar cheese and continue to mix with spatula.

Place finished eggs in a serving bowl and garnish with additional grated cheese, cilantro and jalapeno peppers.

Serve with sour cream and your favorite salsa or picante sauce.

Serves four hungry people.
