Vegetarian Chili
1 cup chopped onions
2 heaping tablespoons of minced garlic
2 cups of water
1 package of dried vegetable soup
1 15 oz. can diced tomatoes
1 small can tomato paste
3 tablespoons of chili powder
2 teaspoons cumin
1/2 teaspoon oregano
1/4 teaspoons of ground black pepper
1 16 oz. can of kidney beans, drained

Combine all ingredients in a large sauce pan and simmer for one hour.

Place in serving bowls and top with shredded sharp cheddar cheese and chopped cilantro.

Makes 6-8 servings.
