Irish Soda Bread
4 cups of flour
4 teaspoon baking powder
1 cup sugar
1/2 teaspoon salt
1 1/2 Cups raisins
2 eggs, beaten
1 cup butter, melted
1 cup milk
1 teaspoon caraway seeds (optional)

Preheat oven to 350 degrees.

Soak raisins in warm water until plump.

Sift dry ingredients together in a large mixing bowl.

Add eggs, milk and butter, mix until consistent. Drain raisins and add to batter. Mix until evenly blended.

On a floured surface, form dough into a loaf that will fit into your loaf pan.

Lightly grease a loaf pan and place formed dough in pan.

Bake for 1 hour and 15 minutes or until done. Use the toothpick test to be sure it's done.
